Honey Chia Bananas

On the weekends, especially those rainy day Sundays, in the monsoon season where nothing much is going on and I don’t feel like dirtying the pans to cook for one, I sometimes come up with simple concoctions to feed myself that involve little effort and even less mess, but are still healthy, organic and taste fabulous. This is one of those versatile dishes you can enjoy at any time of the day; breakfast, lunch, dinner, dessert or even as a delicious anytime snack.

The wonderfully smooth sweetness of the bananas blends well with the honey and nuts (*Allergy Warning: my recipe contains nuts – optional if you’re allergic) and the chia seeds. The flavor combination of nutmeg and bananas is perfect, although you could also use cinnamon considering there are some excellent health benefits with the honey-cinnamon combination. I love the taste of fresh grated nutmeg and it’s also very good for you. All of my ingredients are organic, mostly raw and filled to bursting with goodness.

Honey Chia Bananas Recipe:

2 ripe bananas
1 tbsp chia seeds
1 tbsp crushed nuts (optional)
1 tbsp raw honey (or maple syrup)
pinch nutmeg
freshly grated coconut

Peel and slice the bananas into a serving bowl. Sprinkle the chia seeds and nuts over the top. Drizzle the honey over everything. Sprinkle with nutmeg. Serve garnished with a hefty pinch of freshly grated coconut.

*For nut allergies, replace the nuts with 1/4 cup freshly grated coconut (which is not actually a nut!)
